Rosa Mexicano Restaurants Selects New Leader; Company's Former CEO Remains Board Member

Tom Dillon will begin his new role as president and CEO of Rosa Mexicano and Premium Mexican Restaurant group Monday.

Current leader and co-founder Howard Greenstone will continue to serve on the company's board of directors according to restaurantnews.com.

"It's an honor to have been selected to play such a pivotal role in the future growth and development of Rosa Mexicano," Dillon told Restaurant News  "This brand has a rich history and tremendous potential ahead - a powerful combination that I fully intend to maximize in order to propel its continued success."

Dillon is expected to supervise the strategic development of the group, and its expansion domestically and internationally Restaurant News reported. Rosa Mexicano co-founders Dan Hickey, and Doug Griebel, and Greenstone told Restaurant News they're looking forward to working with Dillon.

"We're extremely pleased to welcome aboard Tom, whose diverse and deep background in hospitality and keen understanding of successful brand growth strategies is the perfect match for Rosa Mexicano today," they said.

According to Restaurant News, Dillon has served as president and chief operating officer of Patina Restaurant Group looking after more than 60 restaurants and food operations in performing arts center in cities on the East and West coasts. He's also been in a similar role at Richard Sandoval Restaurants where he led the group's development and execution of its plan for growing globally increasing its number of restaurants from five to 30. 

Dillon also helped Pret a Manger USA increase its size Restaurant News reported. He currently is on its board of directors.

"Tom has the ideal blend of leadership, experience and vision to guide Rosa Mexicano into an exciting new chapter of growth," Rosa Mexicano board of directors' chairman and private equity investment group Goode Partners Joe Ferreira told Restaurant News.
